Caudalia. White wine fermented in cask
VINIFICATION Once the must is obtained the wine is clarified by debourbage. The fermentation is gradual in order to achieve a well defined nose with floral and fruity aromas. Fermentation in american and french oak and a judicious ageing in french oak (3 months).
TASTING Pale straw yellow colour.
On the nose a certain complexity, mature fruit, a floral background with a hint of anis.
On the palate the wine is fresh, flavourful, aromatic, balanced, with a note of citrus, and a fruity and lively finish.
RECOMMENDED Shellfish, oysters with lemon.
A white wine of limited production that offers more than just fruit thanks to fine oak that confers complexity and richness.
