Vallobera Reserva. The San Pedro family
VINIFICATION 90% Tempranillo and 10% Garnacha from vineyards with over 30 years of age. The clusters are selected from vines in vineyards that have been chosen previously for their specific characteristics. Made in 3500 kg French oak vats. Pre-fermentation cold maceration at 9-10ºC for 3 days with long pump overs. On the 4th day, fermentation begins at a controlled temperature (20-23ºC) for 15 days in order to preserve the primary aromas. Following this process, it is macerated for 6 days and the cap is soaked on a daily basis. Aged in American and French oak barrels for 14 months.

TASTING Beautiful deep cherry-red colour. A wine with an elegant combination of ripe fruit aromas, spicy notes provided by the aging process and mineral nuances with a slight char touch. A perfect marriage between fruit and wood. Full-bodied and strong on the palate. Fleshy, balanced, with noble tannins, a long wine. It has a very pleasant aftertaste. Perfect for pairing with roasts, red meat, game, wood-fire roasted lamb chops, cured cheeses. Best served at 16º to 18º.
